Five Day Christmas Countdown!!

Ooooh it’s so nearly Christmas!! Do you get really excited too?? Well, in keeping with the festive spirit I thought I’d share a few little treats to count down to the big day.  I was wondering what sweet and festive thing to make for something scrummy and came across a little recipe which I altered for what I had on hand.

So here is a festive little recipe for ‘Christmassy Slice’!

Christmassy Slice

3/4 of a cup of Dates, finely chopped

1 cup of Desiccated Coconut, extra for sprinkling

1 Orange, zested and squeezed

2 cups of dried fruit – I did 1/3 Apricots, 1/3 Prunes, 1/3 Raisins (or thereabouts), finely chopped

A good handful of Sunflower Seeds

1 Teaspoon of Ground Ginger

1 Teaspoon of Cinnamon

1 Teaspoon of Nutmeg

This is so easy it’s not even funny, plus you don’t even have to bake it – it goes in the fridge to set. How good is that? I love fridge recipes.  All you have to do then, is finely chop all the dried stuff, zest and squeeze the orange over the top and then add the spices and cup of coconut.

Then, mix it all together really well until a sort of ball starts forming.  You’ll notice that the coconut made the fruit go a bit drier than it was, but when you’ve mixed it til it’s gooey again, it’s ready to be pressed into a tin no bigger than 15 or 20cm square.

So you’ll want to line your tin with paper and sprinkle about 2 table spoons of coconut over it and spread it out.  Then spoon over your gooey mix and pat it all down with the back of a wet metal spoon until you’re sure it’s even. Pop it in the fridge to set for at least an hour before taking it out to cut in bite sized squares – seriously, this is sweet and Christmassy so any bigger and your fillings won’t thank you.  Once it’s been cut you can roll it through a bit more coconut to get those sides covered too. And you’re done! A super quick and festive recipe. Yay for Christmassy Slice!
